The hush puppy recipe
By popular request, the recipe for the hush puppies that I
make to go along with the fried fish:
1-1/2
cups corn meal
1-1/2
cups flour
3/4
tsp. salt
1/2
tsp. pepper
1
tbsp. Italian seasoning
1
tsp. baking soda
1
tsp. baking powder
2
eggs
1 cup
milk
2
tbsp. oil
1
small onion, finely chopped
Mix dry ingredients well. Add wet ingredients, stirring
just enough to wet the batter. Let the mixture rise while you are frying
the fish. When the fish is done, be sure you still have at least an inch
of hot oil left in the pan. Use two spoons, one to dip the batter and the
other to plop it into the oil. Turn the hush puppies while they are
cooking, it only takes a couple of minutes. Makes 30 to 40 depending on
the size of your spoons.
